I LOVE homemade mayonnaise! It is super easy to make and taste much better than store bought. You can use it for a base in all kinds of dressings and sauces. My favorite addition is a little bit of hot sauce for a kick.
1 egg (room temperature)
1 tsp mustard seed (in a pinch use prepared mustard)
1 c. Light olive oil
Juice of half a lime or lemon
Black pepper (three turns of the grinder)
Add the egg, juice, salt, pepper, mustard, and 1/4 c. of the oil to the food processor. Put on the lid and mix until blended.
While the processor is on medium, slowly add the remaining oil. We have a Vitamix, so it is emulsified quickly. If you are using a standard food processor, it will take about two minutes.
Most recipes don’t call for black pepper, but I think it adds depth to the flavour. Let me know what you think.
